Fitness Friday: Chocolate Coconut Pops

For Fitness Friday this week, I want to share with you one of my favorite healthy go to snacks!

These are so ridiculously easy and so tasty!  All you need is a food processor to make these scrumptious little morsels.

I don't have exact measurements, because you really don't need them, which is great when you are in a hurry and have hangry people moaning behind you.

  • 1 generous handful or walnuts of pecans
  • 1 1/2 generous handfuls of dates
  • 1 Tablespoon of coconut oil
  • 1/ cup unsweetened shredded coconut (I didn't have any when I made this batch and it was not missed)
  • 1 teaspoon vanilla
  • about 1/2 cup of water

Add the walnuts to your food processor and chop them up a bit.  Add all the other ingredients, except the water.  Crush until turns into a big mess of yumminess.  Now, if your date mixture does not start to cling into a ball inside the food processor at this point, drizzle a small amount of water, as it is going, into the food processor.  Stop once the mixture begins to cling to itself.  Shape into balls and store in an air proof container... if they last that long.
